It's not that the weapons are holstered as even the player's hands are not visible. I was out hunting, but after i hit to track a bear call all my items disappeared from the HUD. Still in their inventory slots and everything, but the Huntermate and ...drag your weapon and the scope from storage (left side) to your inventory (right side). Then exit the locker. Go to your inventory. Click on your weapon. On the right side should open a tab where you can click on the munition and under it on your scope. Last drag your weapon to an equip slot. attach a scope. close the menu and open you inventory, then find the scope and drag drop it on a suitable weapon in your slots to the right. Sometimes it doesn't work first time, so repeat dragging it. mind that you didnt buy the scope for the 30-30 or 45-70 lever actions, they have their own specific scope.

They don't automatically equip when you buy them or take them out of storage. Make sure you have your items out of storage (the right side of the storage menu), then go to the 'main menu' and 'nventory' and equip it to a key at the bottom.
