With this playing style it's better to 2-hand the katana. With bleed build it's better to dual wield blood katanas, but I would dual wield blood curved swords instead of katana. But I've seen player more accustomed to katana dual wielding katanas so they can use unsheated skill.
Dual wielding theoratically doubles your damage while two-handing only increases your Str by +%50 but, since katanas are Dex weapons, that Str increase practically dosen't increases your damage. I use double katana/dagger for bleed. Also I get several attacks with the dagger/katana as opposed to just one weapon.
