I have the same issue, tried with dead eye with and without the marking, also no ussing dead eye pointing at the gun and to the hand and still cant manage to disarm any enemy, its funny i even see how the bullet hit the gun and bounce.

Struggling for a week on SS8 and the furthest I got was 2/3 by camping at the end of the dock next to the fence in Van Horn and literally 30 dead bodies on the dock. I'm gonna try the tips above. I agree that it is very unreliable hitting the gun or arm and getting tired of it.
